Steps

  • Top, tail, and peel the cucumber.
  • Slice cucumber into 1.5 to 2 cm thick rounds to create approximately 18 pieces.
  • Scoop out the center of each slice with a melon baller to create a cup with a 5 mm border.
  • Arrange the cucumber cups on a platter and set aside.
  • Mash the feta cheese in a small bowl with a fork until smooth.
  • Stir the chopped dill and black pepper into the feta cheese.
  • Fill each cucumber cup with the feta mixture.
  • Top each bite with pomegranate seeds and serve.
