Steps

  • Flatten chicken breasts between cling film to 0.5cm - 1cm thickness.
  • Season chicken with salt and pepper then coat lightly in flour.
  • Combine breadcrumbs and grated Parmesan in a bowl.
  • Dip each chicken breast into beaten egg and then into the Parmesan breadcrumbs.
  • Fry chicken in olive oil and butter for 4 minutes per side.
  • Place tomato halves on a tray under a preheated grill topped with garlic.
  • Season tomatoes with salt, pepper, and olive oil then grill until very soft.
  • Scatter torn basil leaves over the grilled tomatoes.
  • Serve the crispy chicken on warm plates with tomatoes and lemon wedges.
