Method

Melt butter in a frying pan and fry leeks for 5 minutes until softened.

Stir in feta and cream, season, and simmer for 5 minutes until cheese melts.

Soak two wooden skewers in cold water for 10 minutes and drain.

Thread potatoes, red pepper chunks, and rosemary onto the skewers.

Brush skewers with oil and griddle in a hot pan for 5 minutes until tender.
