Steps

  • Wrap the sweet potato in wet baking paper.
  • Microwave on high for 6 to 7 minutes until softened.
  • Remove the paper and scoop out the potato flesh into a bowl.

  • Season with salt and pepper and spoon the mixture back into the potato skin.
  • Place on a plate and sprinkle with parsley to serve.
