Steps

  • Heat olive oil in a pan and cook sliced shallots and onions for 8 minutes until soft.
  • Melt butter in a separate pan and sauté mushrooms and garlic for 3 minutes.
  • Place 125g of couscous in a bowl and cover with boiling water by 1cm.
  • Cover the bowl with cling film until the water is completely absorbed.
  • Fluff grains with a fork and season with salt and pepper.
  • Plate the couscous topped with the onion and mushroom mixture and garnish with parsley.
