Steps

  • Boil potatoes in salted water for five minutes and drain.
  • Sauté the onion and garlic in 30ml of oil until softened.
  • Mix onion, corned beef, Worcestershire sauce, gherkin, and mustard in a bowl.
  • Transfer the seasoned meat mixture to an ovenproof dish.
  • Fry the potatoes in remaining oil and butter until golden-brown.
  • Preheat the grill to a high setting.
  • Top meat with potatoes and grill for 4-6 minutes until crisp.
  • Serve portions topped with one poached egg and condiments.
