Steps

  • Combine flour, shortening, salt, butter, and water in a bowl.
  • Crush ingredients together by hand to form a fairly dry dough.
  • Turn the dough onto a clean surface without adding flour or oil.
  • Knead vigorously for 6 minutes until the dough is smooth and glossy.
  • Wrap dough in cling film and chill for 30 to 60 minutes.
  • Cube potatoes, swede, onion, and beef into 1cm squares and season.
  • Grease a baking tray and line it with silicone paper.
  • Preheat the oven to 170°C.
  • Divide dough into four pieces and roll each into a 25cm disc.
  • Place a quarter of the filling and a knob of butter on half of each disc.
  • Fold pastry over, seal the edges, and crimp to secure the filling.
  • Brush with egg wash and bake for 45 minutes until golden brown.
