Combine flour, shortening, salt, butter, and water in a bowl.
Crush ingredients together by hand to form a fairly dry dough.
Turn the dough onto a clean surface without adding flour or oil.
Knead vigorously for 6 minutes until the dough is smooth and glossy.
Wrap dough in cling film and chill for 30 to 60 minutes.
Cube potatoes, swede, onion, and beef into 1cm squares and season.
Grease a baking tray and line it with silicone paper.
Preheat the oven to 170°C.
Divide dough into four pieces and roll each into a 25cm disc.
Place a quarter of the filling and a knob of butter on half of each disc.
Fold pastry over, seal the edges, and crimp to secure the filling.
Brush with egg wash and bake for 45 minutes until golden brown.
