Steps

  • Preheat your oven to 120°C and line two baking trays with baking paper.
  • Whisk egg whites in a clean glass bowl until soft peaks form.
  • Whisk in caster sugar gradually until the mixture is thick and glossy.
  • Fold in the icing sugar, rosewater, and food colouring.
  • Place teaspoonfuls of the mixture onto trays and bake for 2 hours.
  • Heat double cream in a saucepan until boiling, then stir in white chocolate and raspberries.
  • Sandwich two cooled meringues together using a teaspoon of the filling.
