Steps

  • Preheat the oven to 180°C and line a 30x20cm tin with baking parchment.
  • Gently heat the brandy and add the cranberries to soak.
  • Melt the chocolate and butter together until smooth and set aside to cool.
  • Whisk the eggs and sugar together in a large bowl until pale and fluffy.
  • Whisk the chocolate mixture into the eggs then fold in the remaining dry ingredients and brandy.
  • Pour the batter into the tin and bake for 25-30 minutes until firm.
  • Cool the brownies in the tin for 10 minutes then transfer to a wire rack.
  • Cut the cooled brownie into squares and dust with icing sugar.
