Steps

  • Preheat the oven to 180°C and butter a 20cm springform cake tin.
  • Melt the dark chocolate and butter in a bowl placed over simmering water.
  • Whisk the egg whites to stiff peaks and whisk the yolks with caster sugar until pale.
  • Add the melted chocolate mixture to the egg yolks and fold in the egg whites.
  • Pour the batter into the tin and bake for 20 minutes.
  • Cool the cake then dust with icing sugar and cocoa powder.
