Steps

  • Preheat the oven to 140°C.
  • Line two baking trays with greaseproof paper.
  • Whisk egg whites in a clean bowl until soft peaks form.
  • Gradually whisk in the sugar until stiff peaks form.
  • Gently fold the chocolate and cocoa into the meringue mixture.
  • Spoon tablespoons of mixture onto trays and place in the oven immediately.
  • Bake for 40 minutes.
  • Melt the chocolate and cream together in a saucepan over low heat.
  • Transfer the cream to a bowl and let it cool.
  • Sandwich two meringues together using the chocolate cream as filling.
