Steps

  • Combine flour, salt, olive oil, and yeast in a large bowl with 320ml of water.
  • Knead the dough on a floured surface for 4 to 7 minutes until pliable.
  • Incorporate the cherries and chocolate chips into the dough, adding flour if necessary.
  • Cover and leave the dough to prove until doubled in size, about 1 to 1.5 hours.
  • Divide the dough into two strands and plait them into a loaf shape.
  • Place the loaf on a floured tray inside a plastic bag to prove for 1 hour.
  • Preheat the oven to 220°C.
  • Bake for 20 minutes, then lower to 200°C for another 20 to 25 minutes.
  • Cool the loaf on a wire rack before slicing.
