Steps

  • Preheat the oven to 180°C.
  • Season the flour with salt and pepper and dredge the chicken pieces.
  • Heat oil in a pan and brown the chicken for 2 minutes per side.
  • Remove chicken and fry the mushrooms for 3 minutes and sliced onions for 5 minutes.
  • Return chicken to pan and add stock, purée, tarragon sprigs, and tomatoes.
  • Boil the mixture then transfer to ovenproof dishes and cover with foil.
  • Bake in the oven for 45 minutes until the chicken is cooked through.
  • Adjust seasoning and stir in the parsley and chopped tarragon.
