Steps

  • Mix cherries, sugar, and kirsch and macerate for two hours.
  • Preheat oven to 180°C.
  • Grease a baking dish with butter and coat evenly with sugar.
  • Heat butter in a small pan until it turns a pale hazelnut colour.
  • Whisk eggs, sugar, and vanilla in a large bowl until creamy.
  • Whisk in flour until smooth, then incorporate milk, cream, salt, and melted butter.
  • Combine cherries and their juice into the batter and pour into the dish.
  • Bake for 30-35 minutes until the top is domed and a knife comes out clean.
  • Sprinkle with caster sugar and serve warm.
