Steps

  • Preheat the oven to 200°C.
  • Heat a griddle pan until smoking.
  • Rub the steak with oil and season with salt and pepper.
  • Chargrill the steak for 4 minutes on each side.
  • Rest the cooked steak for 3 minutes.
  • Melt butter and oil in a frying pan over medium heat.
  • Cook the onions and garlic until softened.
  • Sauté the mushrooms until cooked through.
  • Add wine and stock and bring to the boil.
  • Simmer until thickened, then stir in the chervil.
  • Plate the steak and spoon the sauce around it.
