Steps

  • Preheat the oven to 200°C.
  • Toss sweet potato rounds in olive oil and season in a large bowl.
  • Heat a griddle pan until it is smoking.
  • Char-grill the potato medallions for two minutes on each side then roast in the oven for 10 minutes.
  • Remove the potatoes from the oven and place them on an ovenware dish.
  • Mix the egg yolks, cream, cheese, and cauliflower in a bowl and season well.
  • Spread the mixture over the sweet potato and bake for an additional five minutes.
  • Serve the dish directly from the ovenware dish.
