Steps

  • Melt the butter in a saucepan and sweat the onion for 1-2 minutes until softened.
  • Add cauliflower florets and cover with water, then simmer for 8-10 minutes until tender.
  • Drain the mixture through a colander and transfer it to a food processor.
  • Add the grated cheese and 75ml of cream and blend into a thick puree.
  • Season with salt, white pepper, and a pinch of nutmeg to taste.
