Steps

  • Preheat the oven to 180°C.
  • Melt the butter in an oven-proof saucepan for 2 to 3 minutes.
  • Add the pineapple wedges, brown sugar, and vanilla to the pan.
  • Roast the pineapple in the oven for 4 minutes.
  • Place the egg yolk, wine, and caster sugar into a bowl over a pan of simmering water.
  • Whisk constantly over medium heat for 3 to 4 minutes until light and doubled in size.
  • Serve the roasted pineapple with the sabayon sauce on the side.
