  • Melt dark chocolate in a bowl over a pan of simmering water without the bowl touching the water.
  • Stir crumbled fruit cake, Madeira cake, melted chocolate, coconut, and hazelnuts in a bowl until combined.
  • Roll the mixture into golf ball sized spheres, insert lollipop sticks, and refrigerate for 30 minutes until firm.
  • Melt white chocolate over a pan of simmering water and stir in the food colouring.
  • Line a tray with greaseproof paper and place sugar sprinkles on a separate plate.
  • Dip the chilled balls into the white chocolate, coat with sprinkles, and refrigerate for 30 minutes to set.
