Steps

  • Melt 175g of butter in a large sauté pan and sweat the onions until caramelised.
  • Blanch the shredded sprouts in boiling salted water for 1 minute then refresh in ice water.
  • Heat the oil in a sauté pan and fry the almonds until lightly toasted.
  • Melt 25g of butter in a large pan and sauté the sprouts for 4 minutes until softened.
  • Stir the onions and almonds into the sprouts and season with celery salt and pepper.
