Steps

  • Wash the beans, then top, tail, and string them where necessary.
  • Heat the oil in a large heavy-lidded pan and soften the onions and garlic for 2 to 3 minutes.
  • Add the beans in pods and lemon juice, then toss to combine.
  • Pour in the vegetable stock and bring the mixture to a boil.
  • Reduce heat to a simmer, cover, and cook for 20 to 25 minutes until tender.
  • Stir in the fresh dill and serve warm with an optional dollop of yoghurt.
