Steps

  • Dry the meat with kitchen paper.
  • Place meat, vegetables, herbs, and wine in a bowl.
  • Marinate covered in the fridge for at least 12 hours.
  • Remove meat from marinade and pat dry.
  • Heat oil in a saucepan and sear the meat.
  • Remove meat and sweat the marinade vegetables and herbs for two minutes.
  • Return meat to pan with salt and cook for 10 minutes.
  • Add wine marinade and simmer covered for two hours until meat is tender.
  • Remove meat and reduce sauce if necessary.
  • Slice meat and serve with vegetables and sauce.
