Steps

  • Preheat the oven to 180°C.
  • Heat the cherry ingredients in a pan until the mixture thickens into a syrup.
  • Cut the pastry sheet into pieces and scrunch them into small parcels.
  • Brush the parcels with melted butter and dust with icing sugar.
  • Bake the parcels for 4-5 minutes on a baking sheet until golden and crisp.
  • Whisk the cream into soft peaks and fold in the chopped mint.
  • Plate the warm parcels and cherries and serve with the mint cream on the side.
