Steps

  • Preheat the oven to 220°C and grease a six-hole muffin tin with vegetable oil.
  • Beat the egg and milk in a jug, then mix in honey, vanilla, and orange zest.
  • Place flour in a bowl, make a well, and whisk in half the liquid until smooth.
  • Add the remaining liquid and mix until the batter is smooth and runny.
  • Distribute blueberries into the tin and spoon 3 tablespoons of batter into each hole.
  • Bake for 10-15 minutes until golden-brown and a skewer comes out clean.
  • Cool slightly in the tray before transferring to a wire rack.
