Steps

  • Heat olive oil in a large frying pan.
  • Fry the garlic and sea salt for two minutes.
  • Add sliced zucchini and salt, then fry while stirring continuously.
  • Pour in 290 ml of stock and simmer until zucchini softens.
  • Blend half the zucchini with 50 g of butter and return it to the pan with seasoning.
  • Oil and salt the chicken, then char-grill for two minutes per side.
  • Rest the chicken for two minutes before serving over the zucchini sauce.
