Preheat the oven to 190°C.
Melt the butter and mash the bananas well.
Sift and stir the dry ingredients together in a large bowl.
Beat the eggs, vanilla, melted butter, milk, and mashed banana in another bowl.
Stir the egg mixture into the dry ingredients until a lumpy paste forms.
Spoon the batter into paper cases or greased muffin moulds.
Bake for 20 to 25 minutes until muffins come away from the sides.
Rest on a wire rack for 10 minutes before removing from the tray.
Serve with sliced banana, crème fraîche, walnuts, and honey.
