Heat vegetable oil in a non-stick frying pan on medium heat.
Ladle small dollops of mixture into the pan and cook for 2 minutes per side until golden.
Melt butter in a separate frying pan over medium heat.
Add sugar and cook for 2 minutes until it becomes golden caramel.
Stir in cream and banana cubes then cook for 1 minute.
Serve the scones topped with the caramelised bananas.
