Steps

  • Preheat the oven to 200°C.
  • Cut a cross into the top of each fig and place them in a gratin dish.
  • Drizzle the figs with honey, butter, and thyme sprigs.
  • Bake the figs for 6 to 7 minutes and let them cool slightly.
  • Whisk egg yolks, sugar, and Sauternes in a bowl over simmering water until thickened.
  • Remove the sabayon from heat and continue whisking until slightly cooled.
  • Pour the sabayon over the figs on a serving plate.
  • Caramelize the top using a blowtorch or grill and garnish with thyme.
