Steps

  • Combine sugar, cocoa, cornflour, and milk in a pan.
  • Heat the mixture until it forms a thick smooth sauce.
  • Remove from heat and chill for five minutes.
  • Fold the whisked egg whites and cream together.
  • Incorporate the cream mixture into the cooled chocolate sauce.
  • Pour into a 15cm chef's ring and chill for ten minutes.
  • Remove the ring using a blow torch.
  • Plate the mousse and garnish with chopped figs.
