Steps

  • Preheat the oven to 200°C.
  • Trim a thin slice from the bottom of each apple half to level them.
  • Melt butter in an oven-proof frying pan and brown the apples on both sides.
  • Stir in sugar and calvados then cook for one minute before transferring to the oven for eight minutes.
  • Whisk eggs, sugar, calvados, and water in a bowl over a pan of boiling water until thickened.
  • Place apples on a plate and top with the sabayon.
