Steps

  • Heat oil in an oven-proof frying pan over medium heat.
  • Fry aubergine and onion for fifteen minutes to soften.
  • Add garlic and fry for two minutes.
  • Heat a griddle pan and brush ciabatta with oil.
  • Grill bread for 1 to 2 minutes on each side until charred.
