Selection of raw celery, carrots, cucumber, radishes, fennel, peppers, and cherry tomatoes
Method

Heat a frying pan until hot and add the olive oil, garlic, and shallots.

Cook for 1-2 minutes to soften the vegetables without browning them.

Add the anchovies and 110ml of wine to the pan.

Simmer for 1-2 minutes until the wine reduces by half and anchovies break down.

Transfer the mixture to a food processor and add the egg yolk and cream.

Blend the mixture into a smooth paste.

Season with black pepper and pour into a serving bowl.

Serve immediately with the prepared raw vegetables.
