Steps

  • Melt butter in a large shallow pan until foaming and sauté spring onions for several minutes.
  • Boil broad beans for 2 to 3 minutes until tender and optionally remove their outer skins.
  • Place halved lettuces cut-side down in the pan and add vegetable stock to nearly cover them.
  • Add the broad beans and peas to the pan.
  • Season with salt and pepper and simmer for several minutes until tender.
  • Garnish with fresh mint leaves before serving.
