Steps

  • Place the dried fruit in a large pan and cover with the beer.
  • Heat gently until hot but not boiling, then cover and soak overnight.
  • Preheat the oven to 140°C.
  • Stir the sugar, flours, mixed spice, and eggs into the fruit mixture until combined.
  • Divide the mixture between two greased 500g loaf tins.
  • Bake for 75 minutes until risen and firm.
  • Cool on a wire rack covered with a tea towel.
  • Wrap tightly in cling film and store in a cool place.
