  • Three-quarters fill a medium saucepan with water and bring to a boil.
  • Add the eggs and boil for exactly six minutes.
  • Transfer the eggs to a bowl of ice water and peel them carefully.
  • Combine soy sauce, mirin, sake, sugar, and 100ml of water in a saucepan.
  • Simmer the liquid until the sugar dissolves and leave to cool.
  • Place eggs in a small container and pour the cold marinade over them.
  • Cover eggs with muslin to ensure an even coating.
  • Marinate in the refrigerator for 12 to 24 hours.
